Cheesy Salsa Noodles are savory, can be made as spicy (or not) as you like, and this can be made in minutes.  Use any kind of cheese, pasta, and salsa that you want when making this dish.  The best part of all, is that Cheesy Salsa Noodles can be made in one pot, which means using fewer dishes. 

One Pot Cheesy Salsa Noodles

This is a savory and flavorful recipe for One Pot Cheesy Salsa Noodles. Pasta, salsa, sour cream, and cheese bring a delicious combination together for lunch or dinner.

Ingredients
  • 2 cups of cooked noodles
  • 1/2 cup of salsa (any kind of salsa will work)
  • 1 cup shredded cheese
  • 1/4 teaspoon black pepper
  • 1 teaspoon dried parsley flakes
  • 1/2 cup sour cream
Directions
  • Step 1 1. Cook the pasta according to the package directions and drain it.
  • Step 2 2. With the noodles out of the pan still, add the salsa, pepper, dried parsley, and shredded cheese to the pot.
  • Step 3 3. Stir the mixture over medium-low heat until the cheese is melted.
  • Step 4 4. Add the sour cream and noodles to the pot. Cook the Cheesy Salsa Noodles on low for about 5 minutes until everything is warmed up.
  • Step 5 5. You can serve this right away, as soon as everything is heated through.

Method:

First, cook the pasta according to the package directions and drain when it is finished.  I used about 1 1/4 cups dried pasta, which ended up making approximately the 2 cups of pasta needed for this recipe.

 

Before returning the noodles to the pan, add 1/2 cup of any kind of salsa to the pan.

 

Add the pepper and dried parsley to the salsa in the pan.

 

Next, add in the shredded cheese and cook it over medium-low heat until the cheese begins to melt.

When the cheese is melted, add in the sour cream and stir the mixture.

Stir in the cooked pasta.  Stir over low heat for about 5 minutes, until all of the ingredients are heated through.

When the Cheesy Salsa Noodles are heated and warm, serve it into bowls.  Enjoy!

Easy Pasta with Ricotta and Fresh Basil and Tomato

This is such a simple and delicious pasta, and it requires only minimal ingredients.  You can use any kind of pasta with this recipe, and cook it according to the package directions.  I used a spiral pasta, but you can use anything that you have on hand.  Using fresh basil gives it a flavorful and refreshing taste.

Method:

First, cook the pasta according to the package directions.

While the pasta is cooking, slice the tomatoes and fresh basil.  You can always add more to taste.

When the pasta is ready and drained, return it to the pan.   Measure the butter.  Melt the butter and add it to the pasta.  If the pasta and pan are still warm, you can add the butter to the pan and toss it coat.

Measure the ricotta cheese, then add it to the noodle mixture.

Add in the chopped fresh basil leaves and the freshly chopped tomatoes.

Measure the parmesan cheese, and the add that to the noddle mixture also.

 

 

Toss and serve warm. Enjoy!

  • 4 tablespoons of butter
  • 1 1/2 cups of ricotta cheese
  • 1 cup of grated Parmesan cheese
  • 4 tomatoes chopped (you can use more or less to taste)
  • 1 bunch of fresh basil (at least 5-6 tablespoons chopped)

Directions:

  1.  Cook the pasta according to the package directions.  Drain it and return the pasta to the pan.
  2. Measure and melt butter to coat the pasta.
  3. Measure the ricotta cheese and add it to the pasta
  4. Slice the tomatoes and fresh basil leaves, then add them to the pasta.
  5. Measure the Parmesan cheese and toss in the pasta.
  6. Toss and serve warm.  Enjoy!
