This recipe for Italian White Bean Soup uses only 5 ingredients, and it can be ready for lunch or dinner in no time at all.  You most likely have many of these ingredients in the cupboard or pantry at home, making it a quick and simple main or side dish recipe.  Topping the soup with fresh parmesan cheese will add even more flavor to this soup.

 

Method:

Place two cans of chicken broth or use a chicken bouillon base dissolved in water like I did.  I measured 30 ounces of water and added the 4 teaspoons of bouillon to dissolve in the water.

Drain the 2 cans of white beans (Any beans that you have will do.  I happened to use navy beans because that’s what I had on hand).  Then, add the beans to the chicken broth.

 

Measure the Italian seasoning and stir it in the pot.

Mix one can of diced tomatoes that are undrained into the pot.  Any type of diced tomatoes will do.

 

Now, you will want to bring the mixture to a boil.  Once it begins to boil, you can reduce the heat and let it simmer for 5 or so minutes.

Next, add the bag of frozen spinach (you can also use fresh spinach) and let it simmer until the spinach is heated through.

The soup is now ready to eat.  You can also add shredded parmesan on cheese for extra flavor.

This is a quick recipe for Italian White Bean Soup using minimal ingredients, yet it is packed with flavor.

  • 2 15 ounce cans of chicken broth
  • 2 15 ounce cans of white beans, drained
  • 1 Tablespoon Italian seasoning
  • 1 15 ounce can diced tomatoes, undrained
  • 1 16 ounce bag frozen spinach
  • parmesan cheese for topping
Directions
  • Step 1 1. Add the chicken broth, beans, Italian seasoning and diced tomatoes to a pot.
  • Step 2 2. Bring the mixture to a boil and let it simmer for about 5 minutes.
  • Step 3 3. Add the frozen spinach and let it simmer until it is heated through.
  • Step 4 4. Serve into bowls and top with parmesan cheese.
