Sausage Hashbrown and Cheese Breakfast Casserole

A quick and easy breakfast casserole using hashbrowns, sausage, cheese, milk and eggs.

  • 1 pound frozen hashbrowns
  • 2 cups shredded cheese
  • 1 pound of sausage
  • 6 eggs
  • 1 cup milk
  • 1/4 tsp salt
  • 1/4 tsp pepper
  • 1/2 tsp onion powder
  • 1/2 tsp garlic powder
Directions
  • Step 1 Preheat the oven to 350 degrees.
  • Step 2 Brown the sausage.
  • Step 3 Grease a 9×13 pan and add the hashbrowns.
  • Step 4 Add the cooked sausage on top.
  • Step 5 Add the shredded cheese next.
  • Step 6 In another bowl, mix the milk, eggs, salt, pepper, onion and garlic powder.
  • Step 7 Pour the egg and milk mixture on top of the cheese, sausage and hashbrowns that are in the casserole dish.
  • Step 8 Cook in the oven, uncovered, for 40-45 minutes at 350 degrees.
  • Step 9 Let it cool for 5 or so minutes before serving for the breakfast casserole to set.
The casserole dish from this Sausage Hashbrown and Cheese Breakfast Casserole was empty by the end of breakfast.  It’s quick to put all of the ingredients together, and it makes enough for seconds or leftovers.  My 11 year old son isn’t usually a fan of too many breakfast casserole recipes, but he kept going back for seconds and said a couple of times, “Mom, this is really good!”  I used maple sausage which gave the casserole a tad bit of a sweeter taste, making it very kids friendly.  So this recipe is a keeper for us. It is a breakfast recipe that we enjoy making on the weekends especially.  Another option is to prepare it the night before and bake it, and then you can easily warm up individual servings in the morning.

 

Method:

First, preheat the oven to 350 degrees, and then brown the sausage until it is completely cooked.  I used ground maple sausage (any sausage, or other meat or vegetable really, will do). This gave it a hint of a sweet taste that the kids really enjoyed.

While the sausage is cooking, grease the bottom of a 9×13 pan to help prevent the casserole from sticking to the bottom of it.

Then, spread the frozen hashbrowns across the bottom of the greased pan.

Then, add the cooked sausage on top of the frozen hashbrowns.

 

Sprinkle the shredded cheese across the top.  You can really use any kind of cheese that you have or like to use here in this recipe.

 

In another bowl (I just use the measuring cup that I use to measure the milk), combine the milk, eggs, salt, pepper, onion powder and garlic powder.  Mix with a fork or whisk until the eggs are blended.

Then, pour the egg mixture over the top of the cheese, hashbrowns, and sausage in the casserole dish.

Bake the casserole uncovered for 40-45 minutes in the preheated oven.

 

Let the breakfast casserole sit and cool for 5 or so minutes before serving to let the eggs set even more.  Serve and enjoy!
