Enchilada Pie
This is a quick and easy recipe to make enchiladas using layers of corn tortillas, ground beef, and shredded cheese
Ingredients
- 1 pound ground beef
- 1 onion chopped
- 1 15 ounce can tomato sauce
- 1 teaspoon chili powder
- 1/2 teaspoon cumin
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
- 6 corn tortillas
- 1 cup shredded cheese
- 1/2 cup of water
Directions
- Step 1 1. First, brown and cook the ground beef and onion.
- Step 2 2. Stir in the tomato sauce, chili powder, cumin, salt, and pepper to the ground beef mixture and stir until heated.
- Step 3 3. Oil the pie dish (I used olive oil), and then layer the tortillas first, then the ground beef mixture, and then top with the shredded cheese.
- Step 4 4. Pour the water over the top, cover with foil, and then bake in the oven at 400 degrees for 20 minutes.
Method:
First, cook the ground beef and onion in a skillet on the stove until the ground beef is browned and thoroughly cooked.
Next, add the seasonings and the tomato sauce to the ground beef and onion mixture.
Once the mixture is heated, oil the bottom of the pie dish (Or any casserole dish you have will work!). Then, layer the corn tortillas, meat sauce, and cheese in the dish.
Next, you will pour the water over the top.
Cover and bake the Enchilada Pie at 400 degrees for 20 minutes.
