Honey Garlic Meatballs
This is an easy recipe combining garlic and honey to make a meatball sauce that can be served over rice.
Ingredients
- 2 pounds ground beef
- 1 cup dry bread crumbs
- 4 eggs
- 1 teaspoon salt
- 1 tablespoon butter
- 6 garlic cloves minced
- 3/4 cup ketchup
- 1/2 cup honey
- 1/4 cup soy sauce
- Cooked rice
Directions
- Step 1 Combine the ground beef, bread crumbs, eggs, and salt and then mix them well.
- Step 2 Form the meatballs into 1 1/2 inch balls and place them on a cookie sheet. I covered my cookie sheet in foil first.
- Step 3 Bake the meatballs at 500 degrees for 12-15 minutes.
- Step 4 While the meatballs are cooking, melt the butter and saute the minced garlic in a large pan until the garlic is tender.
- Step 5 Add the ketchup, honey and soy sauce to the skillet and bring it to a boil. Reduce the heat, cover the skillet and continue to let the sauce thicken for about 5 minutes.
- Step 6 When the sauce thickens, serve it over cooked rice and the meatballs.
Method:
First, combine the ground beef, bread crumbs, eggs, and salt in a bowl. Mix them together well.
If you shape then into 1 1/2 inch balls, you may be able to make around 48 meatballs. You can also make the meatballs smaller or larger, depending on your preference. You will just need to adjust your cooking time to ensure that the ground beef is thoroughly cooked.
Layer the meatballs on a cookie sheet. I used foil on the bottom of my cookie sheet to have a quicker and easier clean up.
Bake the meatballs at 500 degrees for 12-15 minutes.
While the meatballs are baking in the oven, begin to assemble your ingredients for the honey garlic sauce. You will begin by melting the butter in a large, heated skillet, and then adding the minced garlic to the pan to cook until the garlic is tender.
Once the garlic is tender, add the ketchup, honey and soy sauce to the garlic and butter mixture. Bring the sauce to a boil.
Reduce the heat of the sauce, cover it, and then let it simmer for about 5 minutes.
When the meatballs are cooked, take them out of the oven.
There are two options to finish preparing the meatballs and the honey garlic glaze. First, you can add the cooked meatballs to the sauce in the pan and let the sauce thicken even more. When it is thicked, serve the meatballs and glaze over cooked rice. The second option is to serve meatballs over cooked rice, and then add the honey garlic glaze mixture on top of the rice and meatballs. I went with the second option.
