Simple Spicy Rice Noodles with Chicken
Although this Simple Spicy Rice Noodles with Chicken recipe uses several ingredients, I used a few smaller dishes to prepare the freshly grated ginger, minced, garlic, sesame oil, soy sauce, and more, ahead of time. I made this spicy rice noodle dish for my sister, who has helped watch my daughters 5 days a week once I stopped working remotely, and returned back to work in-person during the the pandemic. She absolutely loved how the flavor of the freshly grated ginger, minced garlic, sesame oil, soy sauce, and the sambal oelek, coated the rice noodles and chicken to add flavor and spice in a fresh dish made from scratch that can be served for lunch or dinner any time of the year.
Method:
Add 2 teaspoons of sesame oil, freshly ground ginger, and minced garlic in a hot skillet.
Stir the garlic and ginger constantly for 30 seconds to a minute.
Now that the ginger and garlic have toasted, place the mixture in a large bowl.
With the above ingredients in the bowl, stir in the remaining sesame oil (1 teaspoon dark sesame oil), chicken, green onions, soy sauce, rice vinegar, hoisin sauce, sambal oelek, and green oinion.
After that, toss the shredded chicken in the bowl.
Next, add the chopped green onion. The green onion gives the dish texture, flavor, and added taste.
With the other ingredients in the bowl, cook the rice noodles according to their package directions.
Then, stir the rice noodles in the bowl and mix everything together.
After the dish is ready, serve and enjoy! As an option, you can add chopped dry-roasted peanuts as a delicious way to top the meal.

Simple Spicy Rice Noodles with Chicken
This rice noodle dish comes together quickly with the rice noodles and shredded chicken coated in soy sauce, sesame oil, hoisin sauce, and sambal oelek chili paste to name a few.
Ingredients
- 3 teaspoons of dark sesame oil, divided
- 1 tablespoon of freshly grated ginger
- 2-3 minced garlic cloves
- 2 cups cooked, shredded chicken
- 1/2 cup chopped green onions
- 3 tablespoons soy sauce
- 2 tablespoons rice vinegar
- 1-2 tablespoons hoisin sauce
- 1-2 teaspoons sambal oelek (ground chile paste)
- 8 ounces rice noodles
- * Optional - Top with dry roasted peanuts
Directions
- Step 1 Heat two of the teaspoons of sesame oil in a skillet, and then add the garlic and ginger to the oil. Stir constantly until it begins to brown.
- Step 2 Cook the rice noodles according to the package directions. I always drain them and rinse the noodles under cold water to keep them from overcooking.
- Step 3 In a large bowl, add the ginger and garlic mixture, the remaining sesame oil, chicken, and all of remaining ingredients.
- Step 4 * Optional – For even more heat, add an extra dash of sambal oelek on top.
- Step 5 *Optional – Top with chopped peanuts.
