We regularly make this Spinach and Cheese Omelette for breakfast in the Lake’s Kitchen.  One omelette is big enough to split into 2 or 3 servings for kids, yet it is a recipe that the whole family can enjoy for breakfast.  Using only one pan, an omelette can be ready in minutes.  Best of all, you can add any other omelette fillings that you prefer or have in the kitchen such as ham, bacon, sausage, or any other vegetables.

This is a quick recipe for a spinach and cheese omelette in a hurry.

The ingredients that you will need are:

  • 3 eggs
  • butter
  • a handful of spinach
  • a handful of shredded cheese

First, heat a pan over medium heat.  Then, add a tablespoon or so of butter (or olive oil) to oil the pan.

Then crack three eggs into the pan.  I usually just stir and blend the eggs right in the pan to use fewer dishes.  After you’ve stirred the eggs, cover the pan with a lid to let the eggs cook a bit.

Once the eggs are slightly cooked, add a handful of spinach on top and cover the pan again for the spinach to begin to wilt (about 3-5 minutes).

After the spinach is softened, add a handful of any flavor of shredded cheese on top.

With a spatula, fold the omelette in half, and cover the omelette again.  Cook for just a few minutes or so until the cheese begins to melt.

Serve and enjoy!
