With quinoa and popular ingredients like green chilies, ground beef, and sour cream, this quinoa main dish is sure to be a hit with your family. Simply add green onions and freshly sliced tomatoes with any kind of cheese for a complete lunch or dinner.
Begin by cooking the quinoa in advanced. To always have near perfect and consistent texture, I always cook quinoa in my rice cooker. I’ve always cooked quinoa it in my most basic, simplest, and trusty $20 rice cooker for over 15 years, before it eventually stopped working. I now use my Zojirushi cooker (a lucky find that was new in the box at Goodwill), and the quinoa turns out just the same, and just as fluffy and consistent. Use any method at that works for you to cook your quinoa.
I actually made the quinoa the night before, but if you are making your quinoa the same day, brown and cook your ground beef before shortly before or after the quinoa is cooked.
Once the quinoa and ground beef are cooked and ready, combine and mix them in a large bowl.
Then, add the green chilies, sour cream, shredded cheese (I used Monterey Jack because that was what was left in the fridge. Use any kind of cheese that you like or have on hand), and a dash of salt and pepper.
After that, mix everything in the bowl together.
Next, spread the mixture in the bowl into the baking dish.
Top with cheese, chopped green onions and the sliced tomatoes.
Then, bake it in the oven.
Remove the Southwestern Quinoa Chili Bake from the oven, and serve.
