Making snack size tortilla pizzas with dipping sauce on the side is a great way to involve kids in the kitchen. Kids can easily help out in the kitchen by spreading the sauce on the tortilla, adding the shredded cheese, and then selecting their toppings. When they are sliced, they are just the right size for little hands to grab, or they can be served whole, as is, for bigger kids to enjoy. If your kids enjoy making these snack size tortilla pizzas, they may also be interested in making pizza bagels – another fun version of pizza without using pizza dough.
First, you will lay out the tortillas, and then spread the sauce on top. I used store-bought pizza sauce, but you can also use any type of spaghetti sauce too. I also used street taco flour tortillas, because they were the perfect size for little hands.
Next, you will add the cheese. Grab some handfuls and sprinkle it on top. I used mozzarella cheese this time, but I’ve also used a blend of Monterey Jack and cheddar cheese.
Next is the best part. Add any toppings that you like on top. We made half with mini pepperoni pieces and half with Canadian bacon as toppings.
After the toppings are all set, place another mini street taco tortilla on top of the pile of sauce, cheese, and toppings.
Place a dab of butter on a heated skillet, and then place the tortilla on top. I covered the skillets for a minute or so to help melt the cheese. When one side of the tortilla is lightly toasted, use a spatula to flip it. You may want to add more butter or not when flipping the tortilla pizza, depending on your preference. Let it warm and toast the tortillas, while melting the cheese, for another minute or so.
When both sides of the tortilla are warmed and lightly toasted, remove the tortilla pizza from the heat and let it cool down a bit before serving.
The tortilla pizzas can be eaten whole, as is, or they can be sliced into smaller pieces. These are great served with pizza or marinara sauce for dipping.
To make snack size tortilla pizzas, you will need the following:
mini street taco flour tortillas (I used 12 which came in one package)
pizza or spaghetti sauce
shredded cheese (I used mozzarella)
toppings (pepperoni, Canadian bacon, or any other toppings you enjoy)
butter for the skillet
extra pizza or spaghetti sauce for dipping
First, lay out the number of tortillas that you want to make. Then, spread pizza or spaghetti sauce on top. Next, add your cheese. Follow by adding your favorite toppings. Add a final tortilla on top. In a heated skillet, add a dab of butter to help toast the tortilla and keep it from sticking to the pan. You can cover the pan if it helps to melt the cheese faster. When the first side is slightly toasted, use a spatula and turn the tortilla to the other side. When the other side is toasted, remove the tortilla pizza from the pan and let it cool slightly on a plate before serving.
