One Pot Creamy Couscous Pilaf – Ready in 30 Minutes or Less From Start to Finish

Couscous is such a fun shaped pasta to have in any dish.  This One Pot Creamy Couscous Pilaf is a spin on the traditional rice pilaf.  Fresh broccoli, onion, bell peppers, couscous, and cream of chicken blend effortlessly to make a tasty recipe in under 30 minutes, from start to finish.

What is Pilaf?

Pilaf is traditionally made with rice, and it often includes a broth, spices, vegetables, and it can include meat.

Although this recipe doesn’t call for using chicken, it is a great way to make the dish more filling by adding the additional protein.

Method:

In a large skillet, heat the oil.  Then add the onion, chopped broccoli, and bell peppers.

 

Saute’ everything for 5 or so minutes until the vegetables begin to soften.

Then, add the water, salt, pepper, and cream of chicken – any generic store brand of cream of chicken works.  Then bring everything to a boil.

 

 

 

After the water is boiling, stir in the couscous, and remove the pan from the heat.  Cover and let it stand for at least 5 minutes.  Check periodically to make sure that the couscous doesn’t soften too much.

Then, the One Pot Creamy Couscous Pilaf is ready to eat.

 

To make the One Pot Creamy Couscous Pilaf even creamier, I added a small handful of shredded cheddar cheese.  I took the leftovers to work the next day for lunch, and it was just as flavorful, and the couscous wasn’t too soft.

Couscous, vegetables, and cream of chicken come together to make a fast yet incredibly easy One Pot Creamy Couscous Pilaf for any day of the week.

Ingredients
  • 1 cup chopped fresh broccoli
  • 1-2 Tablespoons olive or vegetable oil
  • 1 chopped onion
  • 1 cup chopped bell peppers (1-2 bell peppers chopped - any kind)
  • 2 cups of water
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/2 cup cream of chicken soup - generic
  • 1 cup couscous
Directions
  • Step 1 Heat the oil in a large skillet. Then add the broccoli, onion, and bell peppers. Saute’ them until the vegetables soften (approximately 5 minutes).
  • Step 2 Add the water, salt, pepper, and cream of chicken soup. Stir and bring to a boil.
  • Step 3 Stir in the couscous.
  • Step 4 Remove from the heat and cover for about 5 minutes.
  • Step 5 **Optional – add shredded cheese for a creamier taste and texture.
  • Step 6 Serve and enjoy.
