Place two cans of chicken broth or use a chicken bouillon base dissolved in water like I did. I measured 30 ounces of water and added the 4 teaspoons of bouillon to dissolve in the water.
Drain the 2 cans of white beans (Any beans that you have will do. I happened to use navy beans because that’s what I had on hand). Then, add the beans to the chicken broth.
Measure the Italian seasoning and stir it in the pot.
Mix one can of diced tomatoes that are undrained into the pot. Any type of diced tomatoes will do.
Now, you will want to bring the mixture to a boil. Once it begins to boil, you can reduce the heat and let it simmer for 5 or so minutes.
Next, add the bag of frozen spinach (you can also use fresh spinach) and let it simmer until the spinach is heated through.
The soup is now ready to eat. You can also add shredded parmesan on cheese for extra flavor.
